Professional Interests:
Primary interests are related to food and nutrition policy development and implementation with emphasis on risk assessment and risk analysis. Specific research interests involve microbiological issues of food safety and food spoilage, especially in low pH liquid matrices such as beverages and juices. Recent research activity has emphasized methods to ensure safe and secure transportation of liquid foods in over-the-road tankers. We have also been conducting studies on Alicyclobacillus survival and inactivation in juices and purees, and survival of Salmonella in juices.
