Research Activities:

Assessing knowledge, attitude, and behavior associated with diet-related chronic diseases and emerging nutrition and food safety issues; using behavioral theory to evaluate whole grain intake and weight loss programs; evaluating effects of nutrition interventions on health behaviors; evaluating consumer attitudes on dietary supplements; effects of exercise on antioxidant status; enhancing critical thinking skills in consumers; developing survey instruments for assessing perceptions of nutrition and food safety risks

Outreach Activities:

Dr. Kantor has a 100% appointment with Maryland Cooperative Extension (MCE), the consumer education outreach component of the College of Agriculture and Natural Resources. MCE nutrition and food safety programs focus on interpreting scientific research for the general public, helping consumers develop diet and physical activity practices that promote health, and educating consumers about safe food handling practices. Key areas of interest include: Consumer food safety issues; coronary heart disease risk reduction; phytonutrients and health; dietary supplements; nutritional concerns of older Americans.
