Elizabeth Sprecher Senior Student 4 Year Award

A native of Hagerstown, Maryland, Elizabeth (Beth) Sprecher will graduate in May 2005 from the dietetics program in the Department of Nutrition and Food Science. While maintaining a 4.0 grade point average, she has also been actively involved in the Food and Nutrition Club and holds down two part-time jobs.

Beth has served as treasurer and vice-president of the Food and Nutrition Club and was part of a leadership team that brought new life to the club. As treasurer, she created budgets and corresponded with the campus Student Government Association to increase funding for the club. She also helped plan, organize, and implement programs related to dietetics for club members.

Since the fall of 2003, Beth has been a Student Nutritionist Assistant in the South Campus Dining Hall. In this capacity, she has utilized Nutritionist V and FoodPro to obtain and analyze nutrient content of recipes for foods served in the dining halls. She has created low-calorie menus that are available to students in each of the dining halls. She has authored a nutrition article for the Dining Services website and responds to student emails on behalf of dining services. She attended vegetarian board meetings as a representative of Dining Services.

Beginning in the summer of 2004, Beth has also served as a Patient Care Hostess at Frederick Memorial Hospital. In this capacity, she has assisted patients with selecting appropriate menu options, consistent with special diets. She learned various food assembly, distribution, sanitation, and technology systems and methods utilized in the hospital food service department. She also prepared, delivered, and collected 20 to 30 patient trays and interacted with the Registered Dieticians, food service management, and nursing staff to understand patient requirements and meal changes.

Beth is currently serving as a student representative on the University of Maryland Dietetics Program Committee. She received the Robert A. Facchina Scholarship, a Senatorial Scholarship, and the National Dean's list award. She is also a member of the National Society of Collegiate Scholars and Alpha Lambda Delta National Honor Society.
